I don't really finish games i don't like so the only one comming to mind is Biomutant but not because it was bad. The Problem was i really loved the Mechanics and Artstyle but i got sooo bored at some point... i couldn't fully complete it but i struggeled for hours bevor quitting xD

I didn't have that exact experience, but I did 100% complete Sonic R twice, once on a friend's PC and again on the Gamecube.
It was a Sonic racing game, and to be honest it was fun to get first place in spite of the janky controls.
